How to make it

  • Preheat oven to 350
  • Cut the corn off the cob and set aside
  • Dice the pineapple about 1/4 in. by 1/4 in. and set aside
  • Blanch the corn in boiling water for a couple minutes. Drain.
  • Coat chicken breast halves in flour
  • Sautee chicken breasts until golden in butter
  • Flip chicken breasts oven and throw in oven with some pineapple on top
  • Sautee the remaining pineapple and corn in butter with some salt and pepper until black marks appear on corn.
  • Once chicken is done put the corn/pineapple on the bottom of a small plate, then add chicken strips over the corn.
  • Top with cilantro or parsley
