Squash Casserole Recipe
This is so simple, as long as you buy the pre-shredded carrots and cheese. I love this just as a meal by itself. Great for vegetarians. Great at Thanksgiving too!

Ingredients
  • 2 lbs yellow squash
  • 1 bell pepper,chopped into small cubes
  • 2 carrots, grated
  • 1 med. onion, chopped into small cubes
  • 1 cup sharp cheddar cheese, grated
  • 1 can cream of mushroom soup
  • 2 eggs, beaten
  • 1 stick butter, melted
  • 8 oz. sour cream
  • 1 pkg. herb stuffing

Directions
  1. Pre-heat oven to 350 degrees
  2. Cook squash until tender, drain
  3. Mix 1/4 of the stuffing with 1/2 stick melted butter
  4. Mix rest of stuffing with the other 1/2 stick of melted butter and all remaining ing. in large bowl.
  5. Place in casserole dish and bake covered for 20 minutes, then un-cover for the last 15 minutes
