Coffee Nut Raisin Icecream Recipe
My Mum makes this and says it's very easy. And it's wonderful! Recipe comes from her freezer book, so should be accurate. You will need some freezable containers. Keeps upto 6 months in the freezer.

Ingredients
  • 1 tbsp instant coffee
  • 4 tbsp boiling water
  • 2 eggs
  • 100g/4oz icing sugar (confectioners sugar)
  • 300ml/ 1/2 pint double cream
  • 50g/2oz chopped walnuts
  • 50g/2oz seedless raisins chopped

Directions
  1. Dissolve the coffee powder in the boiling water and allow to cool.
  2. Seperate the eggs and whisk the whites until stiff.
  3. Fold in the sifted icing sugar.
  4. Whisk the egg yolks with the coffee mixture together in a large bowl.
  5. Fold in the whisked egg white mixture and combine thoroughly.
  6. Half whip the cream so that it just begins to hold traces of the beaters then fold into mixture in the bowl with the nuts and raisins.
  7. Pour into freezer containers, seal and label.
  8. Will be ready after 1hr in freezer, but may need to be left out for a few minutes before servable.
  9. Don't forget to add a biscuit or wafer when serving!
