Honey Cinnamon Banana Bread

- 2 cups all-purpose unbleached flour shopping list
- 1 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1/2 cup olive oil or butter, depends on how Southern you want it shopping list
- 1/2 cup honey shopping list
- 2/3 cup brown sugar shopping list
- 3+ teaspoons cinnamon shopping list
- 1/2 teaspoon nutmeg shopping list
- 1 teaspoon vanilla shopping list
- 2 eggs, whisked shopping list
- 2 1/3-3 cups ripe bananas (4-5 medium) shopping list
How to make it
- Preheat the oven to 350 degrees.
- Get two separate mixing bowls, one small, one large.
- In the small bowl, add: flour, baking soda, and salt. Stir until thoroughly mixed together.
- In the large bowl, add bananas and mash. Add oil/butter until thick paste-like consistency. Make sure there are still small chucks of banana throughout. Next, stir in honey and brown sugar. Add cinnamon, nutmeg, vanilla, and previously whisked eggs. Continually stir ingredients together until the batter looks even.
- Next, take the ingredients of the small bowl and slowly stir them into the large bowl mix. Keep stirring until all dry ingredients are moist and all ingredients completely consistent.
- Spray a baking pan with cooking spray (olive) oil. Pour the batter into the pan and place in stove. Allow to cook for 45 minutes - 1 hour. At around 40 minutes or so, put a knife through the middle of the bread to check. If it comes out clean, it's ready. If not, allow to cook further, checking every 7 minutes or so. (Note: banana bread seems to always have JUST A DAB of batter-like gooeyness on the knife. I think it's because of the banana. Check to your discretion but Don't allow the bread to overcook and burn!)
