How to make it

  • Mix 3/4 c graham cracker crumbs ,1 Tbs sugar and 2 Tbs melted butter together. Sprinkle on sides and press in boottom of greased 9" spring -form pan.
  • Cook and stir coconut cream pudding and pie filling with 1/2 c sugar and 1 c milk;bring to full boil. Cover pudding surface.
  • Beat 1-1/2 lbs cream cheese and beat in 3 egg yolks,1 Tbs lemon juice,1 tsp vanilla,1/4 tsp salt and pudding.
  • Beat 3 egg whites to peaks;fold in. Pour into prepared pan.
  • Bake at 425 for 30 mins. until set in center. Cool.
