Ingredients
  • One can (15 oz) black beans that have been rinsed and drained
  • One pepper, green (sweet) , raw chopped
  • 3 cups of dry Quinoa grain
  • 1/4 cup of virgin Olive oil
  • 3 tbsp of raw Parsley
  • 1/4 cup raw onion chopped finely
  • 3 tbsp fresh coriander, raw
  • Juice of one whole lemon

Directions
  1. Prepare quinoa according to package directions
  2. Rinse and drain black beans andset aside
  3. Combine quinoa withpepper, beans, onion, and chopped herbs
  4. Add olive oil and lemon juice
  5. Mix to combine all ingredients
  6. add salt and pepper to taste
