Mediterranean Diet Quinoa Salad

- One can (15 oz) black beans that have been rinsed and drained shopping list
- One pepper, green (sweet) , raw chopped shopping list
- 3 cups of dry quinoa grain shopping list
- 1/4 cup of virgin olive oil shopping list
- 3 tbsp of raw parsley shopping list
- 1/4 cup raw onion chopped finely shopping list
- 3 tbsp fresh coriander, raw shopping list
- juice of one whole lemon shopping list
How to make it
- Prepare quinoa according to package directions
- Rinse and drain black beans andset aside
- Combine quinoa withpepper, beans, onion, and chopped herbs
- Add olive oil and lemon juice
- Mix to combine all ingredients
- add salt and pepper to taste
