Stuffed Tomatoes

- 8 large, firm tomatoes shopping list
- 6 basil leaves shopping list
- 2 tablespoons plain yogurt shopping list
- 1/2 teaspoon lemon / lime juice shopping list
- 3/4 cup fresh wholewheat bread crumbs shopping list
- salt shopping list
- pepper shopping list
How to make it
- Cut off the tope of each tomato and scoop out the pulp, discarding seeds and cores (but save the pulp!!). Place the tomatoes on a rack or plate upside down to drain. Mix together the tomato pulp, basil, yogurt, lemon juice and bread crumbs to make a soft puree, season with salt & pepper. Scoop puree into the empty tomatoes and garnish with a sprig of basil!
