Lemon-herb Beef Roast

- 1 beef round tip roast (3 to 4 pounds) shopping list
- Seasoning: shopping list
- 1/2 Cup chopped fresh parsley shopping list
- 1 TBS olive oil shopping list
- 4 to 5 cloves minced garlic shopping list
- 1/4 tsp pepper shopping list
- 2 tsp grated lemon peel (or 3 TBS lemon juice) shopping list
- Veggies: shopping list
- 1 TBS olive oil shopping list
- 1 pound small red potatoes, halved shopping list
- 1/2 pound baby carrots shopping list
- 4 small onions, halved shopping list
- 2 medium zucchini, sliced shopping list
How to make it
- Preheat oven to 325. Combine seasoning ingredingts. Press 1/2 onto beef roast. Combine rest of seasoning with veggies in seperate bowl and toss. Set veggies aside.
- Place roast on rack in shallow roasting pan. Do not add water, do not cover. Total roasting time: Roast at 325 for 1 3/4 - 2 hours for medium rare, 2 1/4 to 2 1/2 hours for medium doneness.
- Add veggies (except zucchini) after first 1/2 to 1 hour, by placing them around beef.
- After meat is done (themometer registers 140 for medium rare; 155 for medium) remove meat and increase oven temp. to 425. Add zucchini to veggies and continue to cook for 15 to 20 min, or till tender.
- Cut roast after it has rested for 15 to 20 min.
- Season with salt.
