Farro Salad With Seafood And Beans Recipe

Ingredients
  • Salt and peeper to taste
  • 1 cup of farro, soaked in water for 1 or 2 hours
  • 1 small pkg of powered saffron –
  • extra-virgin olive oil
  • 8 mussels
  • 8 clams
  • 3 plumb tomatoes- seeded and cut into cubes
  • 1 red bell roasted pepper or from a jar
  • 1 tlsp of fresh mint, fresh basil
  • 1/4 cup fresh parsley
  • 4 ounces canned cannellini beans, drained
  • Field greens
  • ( you can leave out the seafood ,and it will still be a great salad )

Directions
  1. Bring a large pot of water to a boil. Add salt. Add the farro and boil for 20 minutes until al dente -it should be still firm, adding the saffron at the end. Drain the farro and let it cool. Heat a skillet, covering with a film of oil. Heat the mussels and clams , until they open. Take off heat, and shell them, leaving a few in their shells for decora¬tion. Chop the tomatoes and the pepper into cubes. Chop the herbs. Mix in the farro, which will now have cooled, with the vegetables and beans, herbs, mussels, and clams. But on top of the field greens,Top with a few drops of olive oil. SERVES 4 -
