How to make it

  • Bring a large pot of water to a boil. Add salt. Add the farro and boil for 20 minutes until al dente -it should be still firm, adding the saffron at the end. Drain the farro and let it cool. Heat a skillet, covering with a film of oil. Heat the mussels and clams , until they open. Take off heat, and shell them, leaving a few in their shells for decora¬tion. Chop the tomatoes and the pepper into cubes. Chop the herbs. Mix in the farro, which will now have cooled, with the vegetables and beans, herbs, mussels, and clams. But on top of the field greens,Top with a few drops of olive oil. SERVES 4 -
