  • 2 Large Cans Whole Tomatoes
  • 3 Small Cans Tomato Paste
  • 3 Large Cans Tomato Sauce
  • 1/2 teaspoon Soda (to remove the acid from the tomato)
  • 1/4 Cup Olive Oil
  • 3 Onions,chopped
  • 12 Large Garlic Cloves,finely chopped
  • 3 Sweet Green Peppers,chopped
  • 4 Pork Ribs,wrapped in cheescloth bag (for easy removal)
  • 4 Beef Ribs,wrapped in cheescloth bag (for easy removal)
  • 2 teaspoons Italian Herb Seasoning
  • 2 teaspoons Sweet Basil
  • 1 teaspoons Thyme
  • 2 teaspoons Oregano
  • 1 Bunch of Fresh Parsley,chopped
  • 2 Bay Leaves
  • 3 teaspoons Black Pepper,freshly ground
  • 3 teaspoons Salt
  • 4 teaspoons Sugar
  • 3/4 Cup Romano,freshly grated

Directions
  1. ~In a large slow cooker~
  2. Pour tomatoes,paste and sauce.
  3. Add soda and stir well.
  4. In frying pan,add olive oil,onions,garlic,green peppers and meat.
  5. When all these are slightly browned,pour contents into the slow cooker.
  6. Cover.
  7. Set on low and simmer for 8 hours.
  8. Add water as needed(a little white wine would be nice as well)
  9. After the 8 hours,remove the meat,and bay leaves.
  10. Add the herbs,seasonings,sugar and cheese.
  11. Cover and continue to simmer on low setting until sauce reaches the consistency that you like.
