carrot cake

- unsalted butter for the pan shopping list
- 2 and 1/2 cup all-purpose flour, plus extra for dusting pan shopping list
- 5 medium carrots grated shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon baking powder shopping list
- 1/4 teaspoon ground cinnamon shopping list
- 1 teaspoon ground nutmeg shopping list
- 1/2 teaspoon salt shopping list
- 1 and 1/3 cups of sugar OR you can also use splenda shopping list
- 1/4 cup firmly packed brown sugar shopping list
- 3 large eggs shopping list
- 6 ounces plain white yogurt shopping list
- 6 ounces vegetable oil shopping list
How to make it
- preheat oven to 350 degrees F
- butter and flour a 9 inch round and 3 inch deep cake pan. line the bottom with parchment paper
- put the carrots in a mixing bowl and set aside
- put the flour, baking powder, baking soda, spices and salt in a large bowl and mix well
- add the flour mixture to the carrots and mix to just coat the carrots with the flour
- in a food processor combine sugar, brown sugar, eggs and yogurt( if you dont want to use a food processor thats fine to, just stir really well)
- with the processor still running drizzle in the vegetable oil( again if you dont want to use a food processor you dont have to, just drizzle in the oil and whisk at a good pace)
- our this mixture into the carrot mixture and stir untill just combined
- pour into prepared cake pan and bake 45 mins. reduce heat to 325 degrees F and bake another 20 minutes
- remove the pan fro the oven and allow cake to cool 15 mins in the pan
- turn the cake out and cool completely on a wire rack
- you can frost this cake with a cream cheese frosting after the cake has completely cooled or serve a warm slice with a cup of tea..mmmm
