i love this recipe, its my favorite way to make carrot cake and the aroma just fills up the house as it bakes. this recipe makes me very happy..

Ingredients
  • unsalted butter for the pan
  • 2 and 1/2 cup all-purpose flour, plus extra for dusting pan
  • 5 medium carrots grated
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 and 1/3 cups of sugar OR you can also use splenda
  • 1/4 cup firmly packed brown sugar
  • 3 large eggs
  • 6 ounces plain white yogurt
  • 6 ounces vegetable oil

Directions
  1. preheat oven to 350 degrees F
  2. butter and flour a 9 inch round and 3 inch deep cake pan. line the bottom with parchment paper
  3. put the carrots in a mixing bowl and set aside
  4. put the flour, baking powder, baking soda, spices and salt in a large bowl and mix well
  5. add the flour mixture to the carrots and mix to just coat the carrots with the flour
  6. in a food processor combine sugar, brown sugar, eggs and yogurt( if you dont want to use a food processor thats fine to, just stir really well)
  7. with the processor still running drizzle in the vegetable oil( again if you dont want to use a food processor you dont have to, just drizzle in the oil and whisk at a good pace)
  8. our this mixture into the carrot mixture and stir untill just combined
  9. pour into prepared cake pan and bake 45 mins. reduce heat to 325 degrees F and bake another 20 minutes
  10. remove the pan fro the oven and allow cake to cool 15 mins in the pan
  11. turn the cake out and cool completely on a wire rack
  12. you can frost this cake with a cream cheese frosting after the cake has completely cooled or serve a warm slice with a cup of tea..mmmm

My fondest memories of my Grandmother was in great deal...centered around her cooking.
