How to make it

  • preheat oven to 350 degrees F
  • butter and flour a 9 inch round and 3 inch deep cake pan. line the bottom with parchment paper
  • put the carrots in a mixing bowl and set aside
  • put the flour, baking powder, baking soda, spices and salt in a large bowl and mix well
  • add the flour mixture to the carrots and mix to just coat the carrots with the flour
  • in a food processor combine sugar, brown sugar, eggs and yogurt( if you dont want to use a food processor thats fine to, just stir really well)
  • with the processor still running drizzle in the vegetable oil( again if you dont want to use a food processor you dont have to, just drizzle in the oil and whisk at a good pace)
  • our this mixture into the carrot mixture and stir untill just combined
  • pour into prepared cake pan and bake 45 mins. reduce heat to 325 degrees F and bake another 20 minutes
  • remove the pan fro the oven and allow cake to cool 15 mins in the pan
  • turn the cake out and cool completely on a wire rack
  • you can frost this cake with a cream cheese frosting after the cake has completely cooled or serve a warm slice with a cup of tea..mmmm

    Yes,you stated it...food does make the majority of people "Happy"

    My fondest memories of my Grandmother was in great deal...centered around her cooking.

    This is a very nice sounding cake.
