Goats Cheese and Leeks Flan

- 1 roll of shortcrust pastry shopping list
- 400 gms leek, thinly sliced shopping list
- butter to sauté leeks in shopping list
- 200 gms goats cheese (either soft and crumbly like "Petit billy" or 2 rolls thinly sliced shopping list
- 300 mls crème fraîche or cream shopping list
- 2 eggs (beaten) shopping list
- salt/black pepper/grated nutmeg (muscade) shopping list
How to make it
- Heat oven to 200C
- Line tin with pastry and keep in fridge until ready,
- Sauté leeks until soft and put aside to cool a lttle,
- Place leeks in pastry,
- Crumble goats cheese (or lay thin slices) on top of the leeks,
- Beat eggs and cream together, season then pour over leeks and goats cheese in the tin,
- Bake on next to bottom shelf of oven for approx 32 minutes but check on it after about 25 mins.
