How to make it

  • Heat oven to 200C
  • Line tin with pastry and keep in fridge until ready,
  • Sauté leeks until soft and put aside to cool a lttle,
  • Place leeks in pastry,
  • Crumble goats cheese (or lay thin slices) on top of the leeks,
  • Beat eggs and cream together, season then pour over leeks and goats cheese in the tin,
  • Bake on next to bottom shelf of oven for approx 32 minutes but check on it after about 25 mins.
