Goats Cheese And Leeks Flan Recipe
Thiis is perfect cold for picnics or warm for lunch at home.

Ingredients
  • 1 roll of shortcrust pastry
  • 400 gms leek, thinly sliced
  • butter to sauté leeks in
  • 200 gms goats cheese (either soft and crumbly like "Petit billy" or 2 rolls thinly sliced
  • 300 mls crème fraîche or cream
  • 2 eggs (beaten)
  • salt/black pepper/grated nutmeg (muscade)

Directions
  1. Heat oven to 200C
  2. Line tin with pastry and keep in fridge until ready,
  3. Sauté leeks until soft and put aside to cool a lttle,
  4. Place leeks in pastry,
  5. Crumble goats cheese (or lay thin slices) on top of the leeks,
  6. Beat eggs and cream together, season then pour over leeks and goats cheese in the tin,
  7. Bake on next to bottom shelf of oven for approx 32 minutes but check on it after about 25 mins.
