How to make it

  • put bacon in a saucepan and boil, skimming off any foam
  • whilst bacon is boiling put lentils in sieve and leave under cold running water to clean
  • chop onion and vegetables
  • when bacon is cooked take out and chop into small pieces
  • place chopped bacon and veg back into saucepan
  • boil till vegetables tender
  • add lentils and simmer,
  • you can tell when the lentils are done as they split, the soup goes a lovely golden colour and thickens, add pepper to taste and serve
