Enchilada Beef Rice Recipe
I got this off a box of rice about 20 years ago. I'm not sure of the exact measurements of the spices, but this is quick, easy, and cheap to make. I can put it together for one of those busy days with no trouble.

Ingredients
  • Olive oil
  • bitesized sliced beef (london broil, or whatever is on sale)
  • onion
  • garlic
  • 1 tsp each (or to taste) cumin, chili powder, celery salt ,paprika
  • salt and pepper
  • 1 can of chopped green chilies
  • rotel tomatoes, (or one 15 oz. stewed)
  • 2 3/4 Cups water
  • 2 Cups minute rice
  • cheese, (I use American cheese, it's what the orignal recipe called for, so it's what we're use to.)
  • tobasco

Directions
  1. In a small amount of olive oil, saute onion, garlic and beef till beef is done.
  2. Drain the liquid off.
  3. Add spices and stir till beef is covered with spices.
  4. Add green chilies and tomatoes and stir, cook for 3-5 min.
  5. Add water and rice, cover, remove from heat and let sit for 5 min., or till rice is tender.
  6. Serve with cheese on top, and tabasco for those who like it hot!!
