Grilled Steel Head Trout, has always been one of my favorite cuts of fish for grilling, although I do enjoy Salmon grilled the same way. Simply grill and serve with steamed green beans, salsa relish and a salad.

Ingredients
  • FISH
  • 4 (8 once) fresh Steal Head Trout or Salmon
  • 4 teaspoons Salmon & Seafood Seasoning
  • Olive Oil Cooking Spray
  • SALSA
  • 1 Shallot diced
  • 1 Jalapeno Pepper diced
  • 1 Green Onion diced
  • 1 Habanero Pepper diced
  • 1/4 Red Onion diced
  • 1 Green Tomatoe diced
  • 1 Large Tomato diced
  • 1 bunch Cilantro chopped
  • 1 bunch fresh Basil chopped
  • Salt & Pepper to taste
  • 1 tablespoon Olive Oil
  • 1 tablespoon Worchestershire Sauce
  • 1 tablespoon Red Wine Vinegar

Directions
  1. Mix every thing together for the SALSA and place in the refrigerator for at least 12 hours
  2. Clean fish in cold water, pat dry with paper towels. Season fish on each side, wrap in foil and marinate in refrigerator for 15 minutes.
  3. Fire up your grill, using real wo.od charcoals and pecan wood for a sweeter flavor.
  4. Place fish in grill basket coated with cooking spray, directly over hot coals, grill fish 4 minutes on each side or until juices run clear.
  5. Remove from grill and wrap in foil-paper 2 minutes to rest.
  6. Servings 4
