How to make it

  • Mix every thing together for the SALSA and place in the refrigerator for at least 12 hours
  • Clean fish in cold water, pat dry with paper towels. Season fish on each side, wrap in foil and marinate in refrigerator for 15 minutes.
  • Fire up your grill, using real wo.od charcoals and pecan wood for a sweeter flavor.
  • Place fish in grill basket coated with cooking spray, directly over hot coals, grill fish 4 minutes on each side or until juices run clear.
  • Remove from grill and wrap in foil-paper 2 minutes to rest.
