- 2 limes shopping list
- 2 tsp fish sauce shopping list
- 1 lb. (about 15) jumbo shrimp,shells on shopping list
- 2 tsp safflower oil shopping list
- coarse salt and fresh ground pepper shopping list
- 1-1/2 c coase chopped fresh cilantro shopping list
- 1/2 c salted peanuts,coarse chopped shopping list
- 2 scallions,finely chopped shopping list
How to make it
- Zest limes into a bowl. Squeeze in juice from 1 lime and whisk in fish sauce and sugar.
- Preheat grill to high. Brush shrimp with oil on both sides and lightly season with salt and pepper. Grill until pink and firm to the touch,2 to 3 mins per side.
- Toss shrimp wit fish-sauce mixture,cilantro,peanuts and scallions. Juice remaining lime over shrimp.
