Summer Vegetable Beef And Bowtie Soup

- !lb. lean beef round cubes cut in small bite size pieces shopping list
- 1 medium sweet onion diced or chopped shopping list
- 2 large stalks celery diced or chopped shopping list
- 2 small fresh zuccini sliced thin shopping list
- 1 small yellow squash sliced thin shopping list
- 4oz. fresh string beans sliced shopping list
- about 6 oz. fresh lima beans shopping list
- 3 ears white corn (remove from husks with knife) shopping list
- 2 carrots peeled and sliced thin shopping list
- 1 large can of whole tomatoes in puree shopping list
- 1 16 oz. can cannilini beans drained shopping list
- 2 bay leaves shopping list
- one tbls. fresh thyme shopping list
- two tbls. fresh oregano shopping list
- two tbls, chopped fresh Italian parsley shopping list
- kosher salt and fresh pepper to taste shopping list
- 1 teaspoon hot sauce(more if desired) shopping list
- 1 lime juiced shopping list
- (dried herbs may be substituted use 1/2 amount) shopping list
- olive oil to saute,about 2 tablespoons or as needed shopping list
- water to cover all shopping list
- Eight ounces of bowtie noodles (or any you prefer) shopping list
How to make it
- In a large heavy pot,heat olive oil
- Add meat and saute'
- Add onions,celery,carrots,saute'.
- Cover with water
- Add herbs.
- Simmer uncovered about two hours
- Add more water as needed
- Add canolini beans
- Chop tomatoes in puree
- Simmer about 30 minutes more
- REMOVE BAY LEAVES
- Add squash,corn,lima,and string beans
- Add hot sauce
- Bring to a boil
- Add Bowties or any noodles
- Cook till bowties or noodles are tender
- Stir in fresh lime juice
- Serve with hot rolls,bread,or crackers.
