- 2 TO 4 chicken breast---CUT INTO STRIPS shopping list
- 1 MED OR LG red onion CHOPPED shopping list
- 2 TBSP OF PIGNOLI nuts-TOASTED shopping list
- 2 TBSP OF WHITE RAISINS- SOAKED ( OPTIONAL ) shopping list
- 3 TBSP OF dried cranberries shopping list
- 1 0Z DRIED PORCINE MUSHROOM- SOAKED IN water FOR 1 HOUR shopping list
- CUP OF white wine shopping list
- 1 CAN OF tomatoes – 28-OR 35OZ shopping list
- 2 TBSP OF fresh basil, CHOPPED shopping list
- 1 TBSP OF FRESH tarragon, AND oregano shopping list
- 1/2 TSP OF brown sugar shopping list
- 1 chili pepper ( OPTIONAL ) shopping list
- olive oil shopping list
- salt AND pepper TO TASTE shopping list
- TRI COLOR penne OR ziti pasta, OR rice (OPTIONAL ) shopping list
How to make it
- SOAK THE RAISINS AND DRIED FRUIT IN THE WHITE WINE FOR 1/2 AN HOUR. DRAIN AND SAVE THE WHITE WINE. STRAIN MUSHROOMS SAVE WATER
- IN A DEEP PAN, TOAST THE PIGNOLI NUTS FOR A COUPLE OF MIN’S,THEN ADD SOME OIL AND COOK ONIONS TILL TRANSLUCENT ,ADD THE , RAISINS, DRIED FRUIT AND CHILI PEPPER AND MUSHROOM’S -COOK FOR A COUPLE OF MIN’S ,THEN ADD CHICKEN BREAST’S BROWN FOR A FEW MINS -- THEN ADD 1/2 OF CUP OF THE WHITE WINE AND MUSHROOM JUICE AND ADD TOMATOES, SIMMER ON LOW HEAT FOR ABOUT 5 MINS THEN ADD THE SUGAR AND SALT AND PEPPER AND HALF OF THE CHOPPED FRESH HERB’S, CONTINUE TO SIMMER FOR ABOUT 20- 25 MINS--TILL IT GETS THICKER .IF IT GETS TOO THICK ADD THE RESERVED WHITE WINE A LITTLE AT A TIME BUT DON’T MAKE IT WATERY, ADD THE REST OF THE FRESH HERBS, AND MORE SALT AND PEPPER IF NEEDED, IF USING PASTA -TIME IT TO BE DONE AT THE SAME TIME AS THE SAUCE, PUT PASTA IN SAUCE COOK A FEW MINS MORE-SERVE HOT.
