  • IN A DEEP PAN, TOAST THE PIGNOLI NUTS FOR A COUPLE OF MIN’S,THEN ADD SOME OIL AND COOK ONIONS TILL TRANSLUCENT ,ADD THE , RAISINS, DRIED FRUIT AND CHILI PEPPER AND MUSHROOM’S -COOK FOR A COUPLE OF MIN’S ,THEN ADD CHICKEN BREAST’S BROWN FOR A FEW MINS -- THEN ADD 1/2 OF CUP OF THE WHITE WINE AND MUSHROOM JUICE AND ADD TOMATOES, SIMMER ON LOW HEAT FOR ABOUT 5 MINS THEN ADD THE SUGAR AND SALT AND PEPPER AND HALF OF THE CHOPPED FRESH HERB’S, CONTINUE TO SIMMER FOR ABOUT 20- 25 MINS--TILL IT GETS THICKER .IF IT GETS TOO THICK ADD THE RESERVED WHITE WINE A LITTLE AT A TIME BUT DON’T MAKE IT WATERY, ADD THE REST OF THE FRESH HERBS, AND MORE SALT AND PEPPER IF NEEDED, IF USING PASTA -TIME IT TO BE DONE AT THE SAME TIME AS THE SAUCE, PUT PASTA IN SAUCE COOK A FEW MINS MORE-SERVE HOT.
