Traditional Syrian dish, good on its own with a salad or as a side. Sweet flavor from the caramelized onions. Warm and comforting. Goes perfectly with squash and cheese (kusa bi jibneh) A family favorite.

Ingredients
  • 1/2 cup brown lentils
  • 1 cup long grain white rice (or Basmati is also nice)
  • 1 large yellow onion, chopped and sautéed till caramelized
  • pat of butter
  • salt
  • optional: chopped tomatoes and cucumbers, and plain yogurt for topping

Directions
  1. Bring to boil 1/2 cup lentils in enough water to cover generously, reduce heat and simmer 20 minutes or until soft.
  2. Drain lentils and reserve boiling water.
  3. Add more water to make 2 cups.
  4. Return lentil water to pot with lentils, add 1 cup rice, and 1/2 of the caramelized onion to pot.
  5. Add salt and butter.
  6. Bring to boil. Reduce heat to low and steam for 45 minutes.
  7. Stir in remaining half of sautéed onion.
  8. Top with chopped tomatoes, cucumber, and plain yogurt.

One of my favorites. I also like to add chopped dates or raisins to my lentil and rice.
