What's your greatest cooking challenge?

  Because I generally cook only for myself, I keep things simple.
  
  Then, when I have people over, my greatest challenge is figuring out how to get everything ready at the same time! Generally, the meat is ready after the veggies, and I end up serving in courses. I just haven't figured out how to cook for more than one and have it all ready at the same time! Thankfully, my friends are used to my idiosyncracies...and we usually order in pizza!
