    SHEPARD'S PIE-QUICK 'N EASY

    1 to 1 1/2 lbs. hamburger
    1/2 c. chopped onion
    1 can green beans, drained
    1 can corn, drained
    1 can Campbell's tomato
    6 or 8 servings instant potatoes
    1 c. Cheddar cheese, shredded
    Salt and pepper
    Cook meat and onion until meat is browned and onion is tender.
    Add salt and pepper to taste. Mix in vegetables. Add tomato soup.
    Place meat, soup and vegetable mixture into a 9 x 13 pan. Cover
    with mashed potatoes. Sprinkle potatoes with cheese. Bake at 350
    degrees for 30 minutes.

    QUICK'N EASY SALMON PATTIES
    1 can (15 to 16 oz.) pink salmon
    1 egg
    1/3 c. minced onion
    1/2 c. flour
    1 1/2 tsp. baking powder
    1 1/2 c. Crisco
    Drain salmon and set aside 2 tbsp. of the juice in medium mixing
    bowl. Mix salmon, egg and onion until sticky. Stir in flour. Add
    baking powder to salmon juice. Stir into salmon mixture. Form
    into small balls and fry until golden brown (about 5 minutes) in
    hot Crisco. Serve with tartar sauce.

    1 lb. stew beef or round steak cut into strips
    2 cans cream of mushroom soup
    2 cans cream of chicken soup
    1 pkg. dry onion soup mix
    8 oz. sour cream, if desired
    Brown beef about 3/4 of the way through in skillet. Drain. Mix
    ingredients together in a slow cooker and heat, DO NOT DILUTE
    SOUPS. Serve over steamed rice or buttered noodles. Great also
    over a baked potato.





    QUICK AND EASY BUTTERMILK BISCUITS
    3 c. self-rising flour
    1/2 c. cooking oil
    2 3/4 c. buttermilk
    Preheat oven to 400 degrees. Sift flour in mixing bowl. With a
    fork make deep hole in flour and add buttermilk. Stir until all
    flour is blended. Using spatula, scrape dough onto a well-floured
    surface. Sprinkle flour all over top of dough.
    With palm of hand pat dough out to 3/4 inch thick, adding flour
    as needed. With biscuit cutter or small juice glass, punch out
    biscuits. Shake off excess flour and dip in cooking oil. Arrange
    in 12 inch pizza pan. Bake 30 minutes.


    QUICK AND EASY CLAM CHOWDER

    2 (15 oz.) cans Snow's clam chowder, New England style
    1 (6 1/2 oz.) can minced clams
    1 qt. Half and Half (or two 15 oz. cans evaporated milk plus 2
    cans of water)
    Combine chowder, minced clams water, and Half and Half. Heat
    slowly, stirring occasionally until mixture comes to a full boil.
    Serve hot with ritz crackers.



    PIZZA DOUGH (QUICK AND EASY)
    2 pkg. rapid rise yeast
    2/3 tsp. warm water
    1 tsp. sugar
    1 tsp. salt
    4 c. flour
    1 tsp. sugar
    2/3 c. warm water
    Preheat oven to 350 degrees. In a small bowl, mix first 3
    ingredients. Let stand until foamy. In a large bowl, mix salt,
    flour, sugar and water. Mix together and knead. Let rise 45
    minutes to 1 hour. Spread on pan. Top as desired. Bake for 25-35
    minutes. Makes 1 pizza.

    Whip the Dream Whip as directed on package. Pour over remaining
    ingredients and toss well. Chill for about 2 hours, garnish with
    toasted coconut if desired.


    QUICK AND EASY SALAD

    1 (8 oz.) pkg. cream cheese
    3 tbsp. mayonnaise
    1/2 c. sugar
    1 c. drained, crushed pineapple
    1 pkg. Dream Whip (whipped)
    Marshmallows
    Walnuts
    Maraschino cherries
    Mix together first three ingredients. Add all remaining
    ingredients and mix. Chill and serve.



    QUICK AND EASY AMBROSIA

    1 (16 oz.) Cool Whip (thawed)
    2 (3 oz.) pkg. instant pistachio pudding
    1 (16 oz.) can fruit cocktail with juice
    1 sm. can mandarin oranges
    1 1/2 c. miniature marshmallows
    1 c. shredded coconut (optional)
    In a large truffle bowl (or whatever kind you will be serving in,
    mix the Cool Whip, fruit cocktail with juice, mandarin orange
    sections with juice and pistachio pudding until well blended.
    Add miniature marshmallows and coconut; mix well. Refrigerate
    until serving. Garnish with fresh strawberries or your favorite
    fruit.




    QUICK & EASY CHEESE CAKE
    2 (8 oz.) pkg. cream cheese
    1/2 c. sugar
    1/2 c. of sour cream
    1 (16 oz) tub of whipped topping
    1 tsp vanilla flavor
    2 graham cracker crumb pie shells

    Make sure cream chees is at room temperature, blend with sugar
    until smooth, add sour cream, continue to blend until mixture is
    smooth, add whip topping and vanilla, blend together well. Spoon
    into 2 graham cracker crumb pie shells. Chill for about 3 hours,
    garnish with your favorite fruit topping.

    lasagna noodles

    1 (32 oz.) jar or can spaghetti sauce
    2 (8 oz.) cans tomato sauce
    1 (8 oz.) can water
    3 c. shredded Mozzarella cheese
    1 c. shredded cheddar cheese
    In a skillet brown hamburger and onion. Drain. Add salt, pepper,
    spaghetti sauce, tomato sauce and water. Simmer on low for 45
    minutes stirring regular. Mix together cheeses in a bowl and set
    aside. In a baking pan place a layer of uncooked noodles, a thin
    layer of sauce and a thin layer of cheese. Repeat layering ending
    with cheese, cover with Cover with foil and bake at 375 degrees,
    for about 45 minutes, last ten minutes of cooking remove foil.
    After removing foil close oven and let lasagna set in hot oven
    for about 15 to 20 minutes.




    QUICK AND EASY JAMBALAYA

    1 lb. smoked sausage
    1 bell pepper
    1 onion, chopped
    1 can tomatoes
    1 c. rice
    Creole seasoning to taste
    Cut sausage in small rounds. Cover 10 inch skillet and brown both
    sides while sauteing onion and peppers in same skillet. Add
    chopped, canned tomatoes. Cook 1 cup rice in 1 1/2 cups water in
    saucepan. Cook rice while sausage, onion and peppers are cooking.
    Add cooked rice to sausage, pepper and onion. Heat all together.
    Add creole seasoning to taste.
