Any time there is a special need it creates a need for moral support so I'm opening this thread for anyone who needs a shoulder to lean on.

I just wanted to say that I personally do not have any health restrictions but my husband is hypertensive and diabetic. He's on insulin and right now his father who is also diabetic is legally blind in both eyes and all of his uncles died from complications from it. We also have a friend who is in now in the hospital because of it. As you can imagine we do take it seriously. Diabetes really have serious consequences that people do not realize until it touches their lives.
I have tried some cookbooks for diabetics but it is a Godsend to have access to recipes people have tried and liked. There's not a line cook in my home that makes separate dishes for each member of my family so the food has to be healthful and good.
Is there anyone else out there that is dealing with the dilemma of cooking healthy and appealing meals for everyone in your family? While not spending all day in the kitchen.
