I can't get it out of my head....

    Like the Electric Light Orchestra song, I can't get it out of my head.... What's stuck swirling 'round and 'round in my head? Last night's dinner! I love to go to Pinterest and just scroll thru the feed and see what there is to offer. Very often I click that "Save" button and save items to my various boards. No shock that most of them go into a food board. Well, the other day I found a recipe for Grilled Coconut and Pineapple Sweet Chili Shrimp, https://www.pinterest.com/pin/460141286934190895/

    I saved it and added the items to my grocery list that I would need to make it. Last night I decided to try it. It was dark and cold so I opted not to use the grill outside but instead I used my Cuisinart Griddler on the Grill setting. It worked just fine. The recipe called for a pound of shrimp but it's just me so I thought I should cut everything in half. Big Mistake. This was so delicious I was really wishing I had made the entire pound! I minced up a chunk of pineapple to add to the sweet chili sauce. I'll add here that using fresh pineapple is an absolute must! I really don't like the canned variety of pineapple so I generally always use a fresh one. When I bought the ingredients I was concerned that the bottle of sweet chili sauce I bought, the only kind I could find on the shelf (who knew sweet chili sauce would be difficult to find during a Pandemic?!), would be wasted as it was a large bottle. Nah. I'll be using that up in no time!

    Every once in a while I come across a recipe that keeps me wanting it long after the plate has been licked clean and this is one of those recipes!

    I am impressed with the amount of cooking you do-since it's just me here I don't cook very often. Your shrimp recipe sounds delicious, I just might be inspired to try it. I will take your advice and make the full recipe!

    Sclaire - There have been some days I have had to force myself to cook, but once I get started I'm always glad I did. I love to cook, bake, and eat so I will continue to do it until I can't anymore. Most recipes I cut in half so I don't have to eat it for days on end.
