Pumpkin Butter

    I didn't want to post this one on the main board as I have not tried it. But gosh golly gee it looks so good.
    I found it in Home Cooking.

    Pumpkin Butter

    This spicy spread is tailor-made for homemade bread.
    1 (16-ounce) can canned pumpkin
    2/3 cup brown sugar, firmly packed
    1/4 cup honey
    1 tablespoon lemon juice
    1/4 teaspoon cinnamon
    1/8 teaspoon ground cloves
    In a medium saucepan, combine pumpkin, brown sugar, honey, lemon juice, cinnamon and cloves; mix well. Bring to boil over medium-high heat, stirring frequently. Reduce heat and simmer for 20 minutes, until thickened, stirring occasionally. Pour hot mixture into sterilized jars; seal immediately.
    Makes 2 cups.

    AND...if you prefer not to make your own....
    I got mine at the grocery store, by the produce, where they carry certain products that just shouldn't go down the other aisles.
    It was from a reputable, small company that makes those sorts of things.
    You might even be able to find these at local farmers markets.
    Coffeebean, maybe you should post this to the recipes! This will be too good NOT to have there, as this could be buried and lost!

    If I make it again, I will use less honey, as I think it overpowers the pumpking flavor.
    It is still good, though.
    I am thinking it will be good, served with cream cheese and crackers and think it will be a good snack for work.

    I tasted the butter before it had been sealed. Now that it has set for a while it really is delicious, but sweet. It was a hit. Had to deliver some to a friend and he really enjoyed it, along with his own jar of applesauce that he had been patiently waiting on.
    Both were hits and keepers.

    It was delicious! We threw some sliced italian bread onto the grill (restaurant), toasted the bread and slathered the slices with the pumpkin butter. We were both oooohing and aaahing. It's a wonder the customers weren't coming back to see what was going on in the kitchen! LOL
