Zucchini Bread

  I really enjoyed this bread,Fantastic! Nice and moist, I left out the nuts and used a 3/4 C less sugar. great texture. enjoy!!!
  
  Ingredients
  2 1/2 cups sugar
  3 eggs
  3 cups flour
  3 teaspoons vanilla
  1 cup oil
  2 cups zucchini, grated
  1/4 teaspoon salt
  1 teaspoon baking soda
  1/4 teaspoon baking powder
  1 cup nuts (optional)
  3 teaspoons cinnamon
  
  Directions
  Preheat oven to 350 F degrees.
  Combine all ingredients.
  Pour into two greased loaf pans.
  Bake for one hour.
