Mushrooms Over Bread Appetizer

Any type of rustic white bread will do. Do not use that packed white bread since it is to soft and flimsy.
My family loves this appetizer which i often make for company- just increase the quantities

Vegetarian Mulligatawny Soup

Being brutally cold now, I adapted several soup recipes to my liking to make a large pot of vegetarian Indian soup.
Truley delicious, and if one wants to make it meat based, use chicken broth and add some chopped cooked Indian flavored or spiced chicken to the finished soup recipe
Serve with my posted Indian chickpea salad and some Indian bread and you'll have a splendid meal!
I also posted another soup version that is made in the slow cooker and also delcious but different!

Indian Chickpea Salad

This is my adaptation of a delcious appetizer salad I had a local Indian restaurant, I hope you enjoy it. The salad is moist but not overly wet from the dressing. Great with Naan bread and an Indian soup

Pan Bagnat With Smoked Mozzarella Sandwich

The Greens Cookbook by Deborah Madison. A pan bagnat is a hard roll hollowed out and filled with whatever you like. This is a vegetarian version, but feel free to add meat if your a carnivore, like me. This is best if served an hour after preparation to allow the roll to soak up the flavorful dressing.
