Oats And Chocolate Shortbread

These slice and bake cookies are tender, crumbly and rich - their tiny size is misleading! Rolled oats and dark brown sugar bring a great earthiness to the dough, and the bittersweet chocolate is a refreshing change to your usual cookie!

My Grandmas Bread

This is my Grandma's bread recipe. I grew up next door to her, and she would bake it almost every day. She used milk fresh from our cows and scalded it, and of course made it all by hand. I've changed the recipe so I can use my stand mixer, and also halved it from the orignial because who needs 4 loaves of bread a day! It holds up well for a few days, but tastes best fresh from the oven. It also makes a real good French toast. Grandma would make both loaves of bread and buns with the dough.

Funky Fruit Flapjacks

A vegan version of the classic sweet snack. i tend to use different dried fruits every time, and if you're allergic to nuts then just substitute them for seeds, more oats or fruit! i find apricots and brazil nuts go particularly well together so i've put them in the recipe, but i say freestyle it!! if you end up with very dry flapjacks, crumble them up, put them in tupperware and use them for granola, no big deal!
