Pretty Darn Good Chili Verde

This is an excellent chili verde. Use it alone, or as a filling for burritos, tacos, enchiladas, or a tostadas.

Verde Salsa

Yummy verde salsa that can be as hot as you want it. I also use it as a sauce for chicken while it grills. I make a lot and give it away or freeze it. It lasts at least 6 months in the freezer.

Smoked Chicken With Tomatillo Bbq Sauce

Tomatillos add a fresh, tangy flavor to this BBQ sauce. From an old Southern Living BBQ special edition. The sauce cooks for 2 hours, and the chicken for 2 1/2 hours. Start the chicken, then make the sauce - it is basted on the chicken druing the last 30 minutes of cook time. I make the sauce the night before, and give flavors lots of time to meld together. Great for a summer deck party!

Enchiladas Verdes

The cream is optional -- if you want authentic, leave it out, but if you want really amazingly good, use it. Store-bought salsa verde is fifth-rate at best -- why buy it when its so easy to make your own? And the enchiladas will only be as good as your salsa verde. See the recipe directions for notes about salsa verde and ingredients. This makes enough to fill 12-16 tortillas.

Chicken Enchiladas With Creamy Green Sauce

These are delicious and so easy. If you don't feel like cooking the chicken on the same night, do it a day ahead, or even use a store bought precooked chicken and use that. That would shave a lot of prep time. Feel free to use mild salsa instead of medium. From Everyday Food.
