Baked Rice With Pine Nuts

This is the best rice recipe I have found. It can be adapted to different cuisines by the addition of seasoning and vegetables. I liked it better with long grain rice than jasmine. I use a 2 qt ovenproof saucepan for this recipe.

Generic Frittata In A Convection Oven

I was looking for a simple way of making a frittata in a small stand-alone convection oven I bought from Sears way back in the '90s and this works very well. It solves the two big problems I had - sticking to the sides of the dish and cooking it through and through. The choice I made was to use stir-fry vegetables, ham diced and swiss cheese. Yum.

Worker Man Quesedillas

Was very HUNGRY and in MadScientist mode last night about 10PM after having spent the DAY (from 1 pm til 9:30 PM) Pressure Washing everything in and around the house...LOL These turned out REALLLY good. I used what I had, but lots of combinations would work. Could even fancy them up with salmon and havarti cheese! True guessipe. I use the 8" tortillas cause they fit best on our Foreman Grill. On my old foreman grill, I used one large tortilla and folded it in half if I made a quesedilla. No rules...do what works for you. Variations listed.
