Cream Of Kohlrabi Soup

Kohlrabi, which is particularly popular in Hungary, Germany, Russia, Israel, and China, is very inexpensive, particularly in the fall. I was able to purchase three large heads----easily enough to make soup for sixteen.

Veal Paprikas

Make this when the stew veal — the cheapest cut, btw — goes on sale. Hungarian paprika comes in sweet (Noble Rose) and hot. If you like spicy, you can use a little hot, but I recommend Noble Rose for this. Spanish paprika (the kind that just says paprika) is comparatively flavorless. Please resist the temptation to increase this. Please. It's so much nicer if you don't turn this into sour cream with other stuff you can't taste. Recipe adapted from George Lang's cookbook.
