Mushroom And Egg Pasta

This was a perfect way for me to use up a bunch of the goodies I scored from the Copper Chef competition I was in last week - after the event was over we were free to raid the ingredients table so I grabbed all the gourmet mushrooms and herbs I could get!

Tossed with pasta, egg substitute and the secret ingredient (shh, it's ketchup!) the exotic meatiness of the mushrooms and pungency of the rosemary make this a delicious dish to savour!

Fresh N Crispy Eggplantwich

A delicious and nutritrious sky-high sandwich - a wonderful way to eat eggplant without having it breaded and deep-fried before smothering it in cheese! Adapted from Fresh in Toronto, and is equally delicious in a whole wheat pita.

This is an incredibly easy yet very tasty meatloaf for 1 or 2 depending on how big of portion you like to eat. I sometimes subsitute chili sauce for the ketchup to give it a little zing. Enjoy

Tomatoless Ketchup

For those who are allergic to the glory that is the tomato, here is a substitute. It isn't spot-on so don't expect it to be, but it is red and full of vegetables... moreso than the storebought kind. About 10 servings of 2 tbsp each.

Pasta A La Refrigerateur

Earlier this week eggchef had me whip up a new noodle dish for him. He loves spicy things (probably as much or more than me!) and he was craving the arrabbiata dish from Mrs. Vanelli's at the mall, complete with garlic bread. I set about boiling the water for the pasta (salted, of course!) but upon opening our pantry I discovered a shocking lack of tomato products. Literally, all we had was 3 kinds of ketchup, and not much else! After a quick conference with Monsieur, I got the go-ahead to use the spicy ketchup along with some more herbage and (surprise surprise) crushed red pepper flakes! It got the 2 thumbs up and a lot of "yummy sounds", so I guess it isn't as bad as it seemed to look when I was making it!
