Real Couples Minestrone

I saw the title of a recipe called "Minestrone Soup For 2" that sounded promising (as a single eater, I'm always looking for small batch cooking) at this URL: http://www.grouprecipes.com/64
657/minestrone-soup-for-2.
html but upon reading the vague (and lacking!) ingredients and method I decided to do my own version. All "optional" ingredients are included in NI.

Casatiello

My adaptation of Peter Reinhart's recipe out of The Bread Baker's Apprentice for a cheese and salami-studded behemoth of a bread! The texture is very similar to a savoury panettone, and even though it isn't sweet it is JUST as rich! I made it even richer by upping the amount of (local) salami and using half and half instead of regular milk since I had it on hand. It rises insanely quickly, quadrupling easily on the first proof, but its heaven when it's done! Serves a crowd (30, easily) and freezes well, which is good if you value your waistline!

A lovely savoury lamb burger, with many intermingling complementary flavours. Not sure where I got this recipe but I've had it for years. Prep time does not include chill time.

Moussaka

This is a great version of an old favourite, which I think I originally got from Delia Smith (we are not worthy...) The herbs and spices are just so good with the meat, providing a rich aromatic sauce. There's a fair amount of prep involved, but so worth it.

Oxtail Soup

A beautiful rich hearty soup - nothing beats the flavour of ox tail. This also takes quite a while to cook but it's superb. I use beef dripping for flavour, and ox tail is quite fatty itself. However, when the soup is done I let it go cold, and remove the excess solid white fat from the top. Like a lot of things it tastes better the next day.
