Broiled Lebanese Style Kefta

Basic Kefta is a very versatile meatball and one of the more popular Lebanese "street foods." It
can be broiled or baked plain, or it can be stuffed with pine nuts and baked in a variety of sauces such as Tomato, Tahini, and Yoghurt. For breakfast, my Grandmother would make a Lebanese version of Scotch Eggs by wrapping Kefta around hard boiled eggs and baking them like mini meat loaves. I put 8 minutes as a cooking time but I am not really sure about that. I just grill them until they are brown on the outside and pink in the middle..

Old Country Tabbouleh

Tabbouleh is another Lebanese national dish. A fresh summer wheat salad lends itself well to variations. One key is to have the greens, wheat and lentils as dry as possible before assembly. Wet ingredients are this salad's worst enemy.

Baked Stuffed Eggplant

This is one of my favorite dishes. There are many variations of this dish throughout the Middle East. This is the version our Family uses. The stuffed eggplants freeze very well. During the height of eggplant season we will do 40 or 50 of them at a time. We also will make up large amounts of the sauce and freeze it separately. In most Lebanese recipes, you can subtitute beef for lamb (we have also used chicken) and Olive Oil for clarified butter.
