This is just a real homely meal that is tasty and filling - you can add some pasta to this to bulk it up a bit or even some quartered potato ( you may need extra stock if you add pasta) - served with freshly baked Artisian bread only enhances the meal to perfection - Easy to prepare and cook - I love it!

Quick Catfish Minestrone

"ministronee, minny stroony, What the hell do you call this stuff? That sounds like eyetalyan to me! Sorry I was channeling my father in law for a minute there. He was a good guy, who worked hard all his life and was able to support a family of five with less than an eighth grade education. He was about as country as you could get without hearing banjoes. We are still trying to wade through those 40 lbs of cat fish we bought a while ago. Finding new and different ways to fix all that damn fish. I know that is not that much fish it is only 20 lb per person. So as I said we are still wadding through it. This recipe came from the Farm raised cat fish web site. If you are ever in a dilemma on how to fix catfish try them.

Roasted Veggies Minestrone

Super Easy Minestrone Soup

Here's one of the quickest and easiest recipes for a good Minestrone soup. This is great for those cold nights when you come home from work and really don't want to cook. Its an inexpensive soup to make and with the use of a jarred or canned marinara sauce, you'll be surprised just how easy this is to make!

Vincent Price Poblano Chile Soup

This recipe is adapted from one in Vincent and Mary Price's "A Treasury of Great Recipes" and it titled "Sopa Poblano." Although it appears amongst those from the Rivoli Restaurant in Mexico City, it doesn't appear to be from the restaurant itself. "This hearty soup, a sort of Mexican minestrone, is made with both [corn and chiles], as you might expect, but it is the unexpected ingredients that make it so good." Let me tell you... this soup is OUTSTANDING. I've made a lot of soups, and this is one of my favorites. I'll be making it often in years to come!
