Puy Lentil Soup With Bacon

Puy Lentils are apparently known as 'the caviar of the poor' - they haven't seen the price charged for them round here... I have adapted this from a Delia Smith recipe and have also included my way of making ham stock. The prep time reflects this. This is, I think, my favourite soup and it is not all that unhealthy! This also freezes very well for OAMC.

Moms Guesstimation Cabbage Rolls

Yes, it's a lot of food - but they freeze beautifully after baking and microwave back to piping hot goodness in a matter of minutes. Not a "traditional" recipe by any means, but it's how my mom and I make them!

About 2 rolls per serving.

Sweet N Spicy Gardeners Pie

My southwestern version of shepherd's pie, made with TVP, chickpeas, sweet potatoes and seasonings from The Spice Depot that were sent to me for review. The site is www.thespicedepot.com for those interested. My carniverous dad loved it and didn't know it was vegan!

Breakfast Burritos

This is a large quantity recipe which makes quite a bit and because it does, it's incredibly cheap. It's also very filling and really isn't all that difficult. The time it takes is really all in the assembly of the burritos. My family loves this and it's great to freeze and reheat for a fast, or on the go, breakfast.

Beef Tortilla Skillet

I can't remember where I originally found this recipe, but I think it may be based on one from Campbell's. In any case, I've deviated from the original recipe quite a bit, and this particular dish is my family's absolute favorite. They love this more than anything else I cook and that's great because it's so incredibly easy! It's also incredibly versatile and I can do a number of different things with it.

Southern Style Mashed Potatoes

My family prefers mashed potatoes that 'stick to the ribs,' meaning that they like them thick. Not everyone does, so you can add liquid to thin them out as you wish. Also these freeze well, but can also be served immediately instead. Many sites will say not to use a mixer when making mashed potatoes because it makes it "gummy". This gets definitely thick and gummy, but it still is good and I don't have the time nor energy to mash them by hand. Quick and easy are my middle name, and besides, the mixer still does the job well enough. Prep and cook times are approximate.

Grilled Burritos

This is my recipe for making burritos to freeze. It sounds complicated, but it really isn't all that bad. Though this is designed for one meal, I usually triple it to make enough for 3 meals.
