Scungilli Salad

I made this last Christmas as part of the feast of the seven fishes (Italian tradition). My niece hosted that holiday dinner and this was my first attempt at snail salad...her Italian in-laws loved it!

Escargot In Wine

Snails In Marinara

A variation on snails, delicious and spicy. Something I had at dinner last night and it was wonderful. This is a guessipe on proportions after a long talk with the wait staff, on the ingredients. Mangia

Escargot In Mushroom Caps

Back in the day, we used to serve the snails in the shell with tons of garlic butter stuffed inside and broiled. Considering the shape of the shell and the difficulty in cleaning them for reuse, I adapted my recipe to include mushroom caps. (My neighbors think I'm nuts because my hurricane preparedness kit has a couple of cans of snails, what can I say Dad#2 brought me a case from his travels to Quebec!)
