Basic Cooked Yogurt Sauce

This sauce is good over stuffed or steamed vegetables. Or as a traditional base sauce for Stuffed Kibbeh Balls or dumplings If you have ever tried to add Cow's Milk Yogurt to a hot dish, you know what happens. To stabilize it for cooking, add cornstarch and/or egg whites. You can add the egg yolk also but it will change the color. My grandmother (and all of her Lebanese friends) claimed that you can only stir in one direction and never to cover the pan. I must admit, every time I switch directions when stiring, it always breaks on me. It is not an easy sauce to get right. Here is a basic recipe that I use. Once it is stable. you can flavor it a number of ways. I would love to hear what other's think.
