Confetti Bean Salad Recipe

Ingredients
  • 1/2 c sliced green pepper
  • 1 (15 oz) can garbanzo beans or chickpeas, rinsed & drained
  • 2 garlic cloves, minced
  • 1 (10 oz) package frozen corn, thawed
  • 1/2 c minced fresh cilantro or parsley
  • 1/2 c sliced sweet red pepper
  • 1 (15 oz) can black beans, rinsed & drained
  • 1/4 c olive oil or canola oil
  • 1 (16 oz) can kidney beans, rinsed & drained
  • 1/2 c balsamic vinegar or red wine vinegar
  • 1/4 c sliced onion
  • 1 tsp chili powder
  • 1 small jalapeno pepper, seeded & finely sliced* (optional)
  • 1/2 tsp sugar

Directions
  • Step #1 In a large bowl, mix the first 10 ingredients.
  • Step #2 In a jar with a tight-fitting lid, mix the vinegar, oil, chili powder & sugar;.
  • Step #3 shake well.
  • Step #4 Pour over bean mixture; toss to coat.
  • Step #5 Cover & put in the fridge overnight.
  • Step #6 Serve with a slotted spoon.
