Chicken Catch A Cola Recipe

Ingredients
  • 1/4 tsp ground black pepper
  • 1/2 c cooking sherry
  • 3 oz thinly sliced fully cooked ham
  • 1/3 c seasoned dry bread crumbs
  • 4 skinless, boneless chicken breast halves - lbed to 1/2 inch thickness
  • 1 c cola-flavored carbonated beverage
  • 1/2 c sour cream
  • 1 tbsp balsamic vinegar
  • 1 tbsp butter
  • 1 c sliced fresh mushrooms
  • 1/2 tsp salt
  • 1 tsp paprika

Directions
  • Step #1 Combine the bread crumbs, paprika, salt, & pepper in a plastic bag.
  • Step #2 Place chicken breasts in the bag, & shake to coat.
  • Step #3 Melt butter in a large skillet over med-heat/flame.
  • Step #4 Add chicken breasts, & cook for 4 mins on each side, or until brown.
  • Step #5 Remove chicken to a plate, & keep warm.
  • Step #6 Pour the cola into the skillet, & stir this to remove any browned chicken bits from the pan.
  • Step #7 Add ham, mushrooms, sherry, & balsamic vinegar.
  • Step #8 Reduce heat to medium-low, & let simmer, uncovered, until the liquid has reduced by 1/2.
  • Step #9 Stir sour cream into the skillet, & return chicken breasts to the pan.
  • Step #10 Cover, or until chicken is no longer pink, & let simmer for 5 more mins, or the internal temperature is 170 degrees F (75 degrees C).
  • Step #11 Remove chicken to serving plates, & spoon sauce over.
