Ingredients
  • 1 tbsp baking powder
  • 1 c butter
  • 1 tsp salt
  • 1 tsp coconut extract
  • 2 c all-purpose flour
  • 2 c white sugar
  • 5 eggs
  • 1 c flaked coconut
  • 1 c buttermilk

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour a 10 inch tube pan.
  • Step #3 Mix flour, baking powder & salt together & set aside.
  • Step #4 In a large bowl, cream butter & sugar until light & fluffy.
  • Step #5 Add eggs one at a time; beat well.
  • Step #6 Mix in coconut flavoring.
  • Step #7 Add flour mixture alternately with buttermilk, mixing well with each addition.
  • Step #8 Fold in coconut.
  • Step #9 Pour batter into prepared pan.
  • Step #10 Bake at 350 degrees F (175 degrees C) for 1 hr, or until a toothpick inserted into the cake comes out clean.
