Chinese New Year Sweet Rice Recipe

Ingredients
  • 1/4 lb cooked pork link sausage, sliced
  • 1 1/2 c frozen green peas
  • 1 c fresh water chestnuts, peeled & sliced
  • 2 tbsps cornstarch
  • 1 1/2 c water
  • 1 tbsp red wine
  • 1 tsp salt
  • 1 tbsp white sugar
  • 3 tbsps oyster sauce, divided
  • 1 tbsp sesame oil
  • 3 c uncooked jasmine rice
  • 1 bunch green onions, sliced
  • 3 links lop chong (Chinese-style sausage)
  • 2 c dried shiitake mushrooms
  • 1 lb fresh shrimp - peeled, deveined, & sliced
  • 2 tbsps soy sauce

Directions
  • Step #1 Place the jasmine rice & water in a medium saucepan.
  • Step #2 Cover & let this stand at least 1 hr, until the water has been absorbed.
  • Step #3 Transfer to a steamer basket & fluff with a fork.
  • Step #4 Steam 20 mins, or until tender.
  • Step #5 Place the dried mushrooms in a bowl with enough hot water to cover.
  • Step #6 Soak 30 mins or until tender.
  • Step #7 Drain, remove stems, & slice.
  • Step #8 In a small bowl, soy sauce, mix 1 tbsp oyster sauce, salt, sugar, cornstarch, & red wine.
  • Step #9 Place mushrooms in the bowl, & marinate at least 15 mins.
  • Step #10 In the steamer basket, steam the mushrooms & Chinese-style sausage 15 to 20 mins.
  • Step #11 Remove from heat & chop.
  • Step #12 Heat the sesame oil in a large wok over high heat.
  • Step #13 Toss in the shrimp & cook 1 to 2 mins, until nearly opaque.
  • Step #14 Stir in the mushrooms, Chinese-style sausage, green onion, pork sausage, & water chestnuts.
  • Step #15 Cook & stir about 2 mins.
  • Step #16 Mix in the rice & remaining oyster sauce.
  • Step #17 Cook another 3 to 4 mins.
  • Step #18 Remove from heat & toss in the peas.
  • Step #19 Serve when the peas are heated through.
