Cranberry Bars Recipe

Ingredients
  • 1 c rolled oats
  • 2 eggs
  • 3/4 c butter, melted
  • 1 c white sugar
  • 3/4 c packed light brown sugar
  • 3/4 c water
  • 1 (18.25 oz) package yellow cake mix
  • 1 tsp ground ginger
  • 1 (12 oz) package whole cranberries
  • 1 tsp ground cinnamon

Directions
  • Step #1 In a saucepan over med-heat/flame, white sugar, mix the cranberries, & water.
  • Step #2 Cook, & the mixture is thick, stirring every once in awhile until all of the cranberries have popped, about 15 mins.
  • Step #3 Remove from heat, & set aside to cool.
  • Step #4 Preheat the oven to 350 degrees F (175 degrees C).
  • Step #5 In a large bowl, melted butter, mix together the cake mix, & eggs.
  • Step #6 Stir in the oats, brown sugar, ginger & cinnamon.
  • Step #7 Set aside about 1 1/2 c of the mixture, & spread the rest into the bottom of a 9x13 inch baking dish.
  • Step #8 Pack down to form a solid crust, getting it as even as possible.
  • Step #9 Spread the cooled cranberry mixture over the crust.
  • Step #10 Pinch off pieces of the remaining mixture & place evenly over the cranberry layer.
  • Step #11 Bake for 35 to 40 mins in the preheated oven, until the top is lightly browned.
  • Step #12 Cool in the pan for about 40 mins before slicing into bars.
