Chickpea Cauliflower Curry Recipe

Ingredients
  • 1 (15 oz) can chickpeas (garbanzo beans), drained & rinsed
  • 1 c uncooked brown rice
  • 2 garlic cloves, minced
  • 1/8 tsp ground cloves
  • 4 c cauliflowerets
  • 1 large carrot, sliced
  • 1 1/2 tsps curry powder
  • 2 tsps vegetable oil
  • 2 tsps minced fresh gingerroot
  • 1/2 tsp salt
  • 1 (14.5 oz) can sliced tomatoes, undrained
  • 1 c fresh or frozen peas
  • 1 medium onion, sliced

Directions
  • Step #1 Cook the rice according to package directions.
  • Step #2 Set aside & keep warm.
  • Step #3 Place cauliflower in a saucepan; cover with water.
  • Step #4 Bring to a boil; cook for 5 mins.
  • Step #5 Drain & set aside.
  • Step #6 In a large skillet, saute onion, carrot & garlic in oil until tender.
  • Step #7 Stir in the ginger, curry, salt & cloves if desired.
  • Step #8 Add the beans, tomatoes, peas & cauliflower.
  • Step #9 Cook & stir for 5 mins or until heated through.
  • Step #10 Remove from the heat.
  • Step #11 Serve over the rice.
