Daisy's Fruitcake Recipe

Ingredients
  • 1/2 lb sliced candied pineapple
  • 1 tsp baking soda
  • 1/2 c apple juice
  • 3 c sliced, peeled tart apples
  • 2 c coarsely sliced pecans
  • 1/2 lb green candied cherries, halved
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 3 eggs
  • 2 c sugar
  • 1/2 lb candied red cherries, halved
  • 3/4 c vegetable oil
  • 3 c all-purpose flour
  • 2 tsps apple pie spice

Directions
  • Step #1 Line three 9-in.
  • Step #2 x 4-in.
  • Step #3 x 2-in.
  • Step #4 loaf pans with waxed paper; grease the paper & set aside.
  • Step #5 In a large mixing bowl, mix apples, sugar & apple juice; let this stand for 15 mins.
  • Step #6 In a bowl, mix the eggs, oil & vanilla.
  • Step #7 Add to apple mixture; mix well.
  • Step #8 Combine the flour, apple pie spice, baking soda & salt; add to apple mixture & mix well.
  • Step #9 Fold in pecans, cherries & pineapple.
  • Step #10 Pour into prepared pans.
  • Step #11 Bake at 350 degrees F for 55-65 mins or until a toothpick inserted near the center comes out clean.
  • Step #12 Cool for 10 mins before removing from pans to wire racks.
  • Step #13 Remove waxed paper.
  • Step #14 Cool completely.
