Coconut Oatmeal Crispies Recipe

Ingredients
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 c packed brown sugar
  • 2 c quick-cooking oats
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 c butter flavored shortening
  • 1 1/2 c all-purpose flour
  • 1 c sugar
  • 1 c flaked coconut

Directions
  • Step #1 In a mixing bowl, cream shortening & sugars.
  • Step #2 Add eggs, one at a time, beating well after each addition.
  • Step #3 Beat in vanilla.
  • Step #4 Combine the oats, coconut, flour, baking soda & salt; slowly add to creamed mixture.
  • Step #5 Shape into two 6-in.
  • Step #6 rolls; wrap each roll in plastic wrap.
  • Step #7 Refrigerate for 1 hr or until firm.
  • Step #8 Unwrap dough & cut into 1/4-in.
  • Step #9 slices.
  • Step #10 Place 2 in.
  • Step #11 apart on ungreased baking sheets.
  • Step #12 Bake at 350 degrees F for 8-10 mins or until golden brown.
  • Step #13 Remove to wire racks to cool.
