Chicken And Dumplingsii Recipe

Ingredients
  • 1/2 c milk
  • 3 skinless, boneless chicken breast halves - cut into strips
  • 2 tsps baking powder
  • 1 tbsp vegetable oil
  • 1/4 c sliced onion
  • ground black pepper to taste
  • 1 tsp celery seed
  • 1/2 c milk
  • 1 (10.75 oz) can reduced fat cream of chicken soup
  • 1 (14.5 oz) can low-fat, low sodium chicken broth
  • 1/2 c sliced celery
  • 2 tbsps vegetable oil
  • 1 c sifted all-purpose flour

  • 1/2 tsp salt

Directions
  • Step #1 In a large saucepan or Dutch oven, stir this together the cream of chicken soup, chicken broth, & milk.
  • Step #2 Bring to a simmer over med-heat/flame.
  • Step #3 Heat 1 tbsp oil in a skillet over medium-high heat.
  • Step #4 Add chicken strips, onion & celery.
  • Step #5 Sautee until chicken is cooked through, & onions are tender.
  • Step #6 Transfer the chicken mixture to the soup pot, & mix well.
  • Step #7 Reduce heat to low, & let simmer for 30 to 45 mins.
  • Step #8 Spice up with celery seed & black pepper.
  • Step #9 To Make Dumplings: In a medium bowl, stir this together the flour, baking powder & salt.
  • Step #10 In a small bowl, mix together 1/2 c of milk & 2 tbsps of oil.
  • Step #11 Pour into the dry ingredients, stirring just until moistened.
  • Step #12 Drop tbspfuls of the dumpling mixture into simmering chicken stew.
  • Step #13 Cover pot tightly, & bring to a boil.
  • Step #14 Simmer for another 12 to 15 mins - without peeking! Ladle into bowls, & serve hot.
