Ingredients
  • 1 tsp baking soda
  • 3 eggs
  • 1/2 c dried cherries
  • 2 1/2 c all-purpose flour
  • 1 tsp dark rum, or rum flavoring
  • 2 c canned crushed pineapple, drained
  • 1/2 c milk
  • 1/2 tsp salt
  • 1/2 c vegetable oil
  • 1 tsp baking powder
  • 1 c sugar
  • 1 tsp ground nutmeg
  • 1 1/3 c toasted coconut

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Lightly grease two 9x5 inch loaf pans.
  • Step #3 Beat together eggs, oil, rum, & milk in a bowl.
  • Step #4 Sift together flour, nutmeg, baking soda, baking powder, sugar, & salt in a separate bowl.
  • Step #5 Mix the flour into the eggs until just moistened.
  • Step #6 Gently fold in the pineapple, cherries, & coconut.
  • Step #7 Pour into prepared pans.
  • Step #8 Bake in preheated oven until a toothpick inserted into the center comes out clean, about 40 to 45 mins.
  • Step #9 Let cool in pan for 10 mins before removing to cool on a wire rack.
