Chinese Steamed Buns With Meat Filling Recipe

Ingredients
  • ground black pepper to taste
  • 1 tbsp white sugar
  • 1 recipe Chinese Steamed Buns
  • 1 tbsp light soy sauce
  • 1 tbsp vegetable oil
  • 8 oz sliced pork
  • 1 tsp salt
  • 1 tbsp sliced fresh ginger root
  • 2 green onions
  • 2 1/2 tbsps water
  • 1 (4 oz) can shrimp, drained & sliced
  • 1 tbsp rice wine

Directions
  • Step #1 Cook sliced pork in a wok over med-heat/flame.
  • Step #2 After 3 mins of cooking add sliced shrimp if desired.
  • Step #3 Cook until pork is no longer pink.
  • Step #4 Drain, season this with salt & set aside to cool.
  • Step #5 Mix together green onions, oil, soy sauce, rice wine, ginger, sugar, & pepper.
  • Step #6 Stir in minced meat.
  • Step #7 Stir in water & mix thoroughly.
  • Step #8 Chill in freezer for 2 hrs, or in refrigerator overnight to firm up & mix flavors.
  • Step #9 Prepare dough for Chinese Steamed Buns.
  • Step #10 Shape dough into balls.
  • Step #11 Roll each out into a circle, (like Won-Ton wrappers).
  • Step #12 Put 1 tbspful of prepared meat mixture in the center of each circle, & wrap dough around filling.
  • Step #13 Place seams down onto wax paper squares.
  • Step #14 Let stand until doubled, about 30 mins.
  • Step #15 Bring water to a boil in wok, & reduce heat to medium; the water should still be boiling.
  • Step #16 Place steam-plate on a small wire rack in the middle of the wok.
  • Step #17 Transfer as many buns on wax paper as will comfortably fit onto steam-plate leaving 1 to 2 inches between the buns.
  • Step #18 At least 2 inches space should be left between steam-plate & the wok.
  • Step #19 Cover wok with lid.
  • Step #20 Steam buns over boiling water for 15 to 20 mins.
  • Step #21 REMOVE LID BEFORE you turn off heat, or else water will drip back onto bun surface & produce yellowish "blisters" on bun surfaces.
  • Step #22 Continue steaming batches of buns until all are cooked.
