Chinese Cookies Recipe

Ingredients
  • 1 1/2 c shortening
  • 1 1/4 tsps baking soda
  • 1 egg
  • 1/2 c ground walnuts
  • 1 c prepared chocolate fudge frosting
  • 3/4 tsp salt
  • 1 tsp vanilla extract
  • 3 1/2 c cake flour
  • 1 1/2 c white sugar

Directions
  • Step #1 In a medium bowl, cream together the sugar & shortening.
  • Step #2 Stir in the egg & vanilla, beat until light & fluffy.
  • Step #3 Combine the cake flour, baking soda & salt, stir in theto the creamed mixture.
  • Step #4 Dough will be stiff, you may need to use your hands to mix.
  • Step #5 Roll dough into a log about 15 inches long, & roll in the ground nuts.
  • Step #6 Wrap & chill dough for at least an hr or until firm.
  • Step #7 Preheat oven to 350 degrees F (175 degrees C).
  • Step #8 Grease cookie sheets.
  • Step #9 Unwrap dough & cut into 1/2 inch slices.
  • Step #10 Place cookies 1 1/2 inches apart on the prepared cookie sheets.
  • Step #11 Bake for 10 to 15 mins in the preheated oven.
  • Step #12 Allow cookies to cool for a few mins on the baking sheets before removing to cool completely on wire racks.
  • Step #13 When cool, place a dollop of fudge icing onto the center of each cookie.
