Chicken Taquitos Recipe

Ingredients
  • 1 c chunky salsa (optional)
  • 4 skinless, boneless chicken breast halves - cooked & shredded
  • 1 quart peanut oil for frying, or as needed
  • 1 1/2 c shredded smoked Cheddar & Swiss cheese mix
  • 1 (7 oz) can green salsa
  • 1 c sour cream (optional)
  • 1 c sliced onion
  • 1 c guacamole (optional)
  • 20 (6 inch) corn tortillas

Directions
  • Step #1 Heat oil in a deep-fryer to 350 degrees F (175 degrees C).
  • Step #2 In a medium bowl, cheese, mix together the shredded chicken, green salsa, & onion.
  • Step #3 Spoon about 1 1/2 tbsps of the mixture onto tortillas, or enough so that when rolled up, each one is about 1 inch wide.
  • Step #4 Filling should not come to close to the ends, or it will fall out.
  • Step #5 Secure rolls with toothpicks.
  • Step #6 Fry rolls 4 or 5 at a time so there is enough room between them for even cooking.
  • Step #7 Cook for 3 to 5 mins, or until golden brown.
  • Step #8 Once they float, I leave them in for about another min.
  • Step #9 If the taquitos are not crisp when cool, you haven't cooked them long enough.
  • Step #10 Drain on paper towels.
  • Step #11 Serve with sour cream, salsa & guacamole for dipping.
